CARROT CAKE OVERNIGHT OATS

How to make
Place dates in a small bowl and cover with boiling water. Set aside for 10 minutes to soften.
Drain dates and blend with milk, oats, protein powder, spice and carrot in a blender until almost smooth but still with a bit of texture.
Transfer to a serving glass, cover and refrigerate for 2 hours or overnight.
To serve, top with yogurt, walnuts and drizzle over maple syrup.
Ingredients
2 pitted medjool dates
1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)
1⁄3 cup (30g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)
1⁄3 cup (40g) vanilla protein powder (or natural protein powder)
1⁄2 tsp mixed spice
1 carrot (medium) finely grated
To Serve
2 tbs Greek yogurt (or dairy-free alternative)
20g walnuts roughly chopped
1 tsp maple syrup (honey or rice malt syrup)
