CARROT CAKE OVERNIGHT OATS

How to make

  • Place dates in a small bowl and cover with boiling water. Set aside for 10 minutes to soften. 

  • Drain dates and blend with milk, oats, protein powder, spice and carrot in a blender until almost smooth but still with a bit of texture. 

  • Transfer to a serving glass, cover and refrigerate for 2 hours or overnight.

  • To serve, top with yogurt, walnuts and drizzle over maple syrup. 

Ingredients

  • 2 pitted medjool dates

  • 1⁄2 cup (125ml) milk, reduced fat (or dairy-free alternative)

  • 1⁄3 cup (30g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)

  • 1⁄3 cup (40g) vanilla protein powder (or natural protein powder)

  • 1⁄2 tsp mixed spice

  • 1 carrot (medium) finely grated

To Serve

  • 2 tbs Greek yogurt (or dairy-free alternative)

  • 20g walnuts roughly chopped

  • 1 tsp maple syrup (honey or rice malt syrup)
