PEANUT BUTTER, BANANA & BLUEBERRY OATS

How to make
Place oats, milk and water in a saucepan and bring to a gentle simmer.
Add banana, cinnamon and a pinch of salt and stir to combine. Continue stirring until thick and creamy and remove from heat.
At the same time, make jam by adding all ingredients to a saucepan. Cook, stirring frequently, until thick and jammy.
To serve, place oats in bowl and top with blueberry jam, maple syrup, walnuts and peanut butter. Enjoy!
Ingredients
1⁄2 cup (50g) rolled oats (or brown rice flakes or quinoa flakes if gluten free)
1⁄2 cup (125ml) almond milk (or dairy alternative)
1⁄2 cup (125ml) water
1 medium banana chopped
1⁄4 tsp ground cinnamon
2 tsp maple syrup (honey or rice malt syrup)
2 tbs (20g) walnuts chopped
1 tbs (20g) crunchy natural peanut butter (or other nut butter)
Simple Blueberry Jam
1⁄4 cup (40g) fresh or frozen blueberries
1 tsp water
pinch of salt
