CHICKPEA & EDAMAME POWER BOWL

How to make

  • Whisk tahini and lemon juice together in a bowl and season with salt and pepper. 

  • Add lettuce, tomatoes, edamame and chickpeas and toss well.

  • Transfer to a serving bowl, top with pumpkin seeds and serve with warm pita bread.

Ingredients

  • 2 tsp hulled tahini

  • 2 tsp lemon juice

  • salt & pepper, to taste

  • 1 head of baby cos lettuce chopped

  • 100g cherry tomatoes halved

  • 1⁄2 cup (70g) frozen podded edamame defrosted

  • 1 tin of chickpeas (400g tin) drained & rinsed

  • 1 tbs pumpkin seeds (pepitas)

  • 1 wholegrain pita bread, mini (or gluten-free) warmed
