CYPRIOT TOFU SALAD

How to make

  • Place tofu on a plate lined with paper towel. Cover tofu with more paper towel and press down gently to absorb as much liquid as you can. Cut into small cubes.

  • Heat oil in a non-stick frypan over medium heat. Add tofu and cook, turning after a few minutes, for 5-6 minutes until golden. Transfer to a large bowl. 

  • Add remaining ingredients and season with salt and pepper. Toss to combine and serve.

Ingredients

  • 300g firm tofu

  • 1 tsp olive oil

  • 1 cup (160g) pre-cooked brown rice

  • 1 tin of lentils (400g tin) drained & rinsed

  • 1⁄4 red onion finely diced

  • 20g whole almonds (roasted) roughly chopped

  • 2 tbs (20g) currants

  • 1⁄2 pomegranate deseeded

  • 1⁄2 bunch of fresh mint (80g bunch) leaves picked & chopped

  • 1 lemon juiced

  • salt & pepper, to taste
