CYPRIOT TOFU SALAD

How to make
Place tofu on a plate lined with paper towel. Cover tofu with more paper towel and press down gently to absorb as much liquid as you can. Cut into small cubes.
Heat oil in a non-stick frypan over medium heat. Add tofu and cook, turning after a few minutes, for 5-6 minutes until golden. Transfer to a large bowl.
Add remaining ingredients and season with salt and pepper. Toss to combine and serve.
Ingredients
300g firm tofu
1 tsp olive oil
1 cup (160g) pre-cooked brown rice
1 tin of lentils (400g tin) drained & rinsed
1⁄4 red onion finely diced
20g whole almonds (roasted) roughly chopped
2 tbs (20g) currants
1⁄2 pomegranate deseeded
1⁄2 bunch of fresh mint (80g bunch) leaves picked & chopped
1 lemon juiced
salt & pepper, to taste
