FALAFEL & QUINOA BOWL

How to make

  • Cook falafel according to packet directions and set aside. 

  • In a medium bowl whisk lemon juice, oil, chilli, salt and pepper together. Add remaining  salad ingredients and toss.

  • Divide salad and quinoa between bowls and top with falafels, pita and hummus to serve.

Ingredients

  • 10 falafel bites (20g each)

  • 1 cup (180g) pre-cooked quinoa cooked according to packet directions

  • 2 small (50g) wholemeal pita breads or pockets (or gluten free) cut into triangles

  • 1⁄3 cup hummus

Salad

  • 1⁄2 lemon juiced

  • 1 tsp olive oil

  • 1 tsp chilli flakes

  • salt & pepper, to taste

  • 2 cups (60g) rocket

  • 2 medium tomatoes diced

  • 1⁄2 red onion thinly sliced
