SMASHED WHITE BEAN & AVOCADO BRUSCHETTA

How to make

  • Place spinach in a sieve and pour over boiling water until wilted. Drain well and roughly chop.

  • Place beans and mustard in a bowl and roughly mash together. 

  • Stir through spinach and season with salt and pepper. 

  • Spread over toast, top with avocado and squeeze over lemon juice to serve.

Ingredients

  • 2 cups (80g) baby spinach leaves

  • 1 tin of cannellini beans (400g) drained & rinsed

  • 3 tsp Dijon mustard

  • salt & pepper, to taste

  • 2 thin (40g) slices rye bread (or gluten free) toasted

  • 1⁄2 avocado sliced

  • 1 lemon juiced
