SPINACH & FETA QUESADILLA

How to make

  • Combine salsa ingredients and season with salt and pepper.

  • Scatter half the tortillas with spinach leaves, cheese and season with salt and pepper, then top with remaining tortillas.

  • Heat a non-stick frypan over medium heat then gently place tortilla in the pan and cook for 1-2 minutes or until it becomes crisp. Flip and cook the other side. Repeat with remaining tortillas.

  • Serve immediately with salsa. 

Ingredients

  • 4 small (25g) corn tortillas

  • 2⁄3 cup (25g) baby spinach leaves

  • 60g feta

  • salt & pepper, to taste

Salsa

  • 1 medium tomato diced

  • 1⁄4 avocado diced

  • 1⁄4 cup (30g) frozen corn kernels defrosted

  • 1 tsp apple cider vinegar
