SPINACH & FETA QUESADILLA

How to make
Combine salsa ingredients and season with salt and pepper.
Scatter half the tortillas with spinach leaves, cheese and season with salt and pepper, then top with remaining tortillas.
Heat a non-stick frypan over medium heat then gently place tortilla in the pan and cook for 1-2 minutes or until it becomes crisp. Flip and cook the other side. Repeat with remaining tortillas.
Serve immediately with salsa.

4 small (25g) corn tortillas
2⁄3 cup (25g) baby spinach leaves
60g feta
salt & pepper, to taste
Salsa
1 medium tomato diced
1⁄4 avocado diced
1⁄4 cup (30g) frozen corn kernels defrosted
1 tsp apple cider vinegar
