TOFU TACOS WITH TAHINI

How to make
In a bowl season tofu with paprika, ground coriander and salt and pepper.
Heat a non-stick frypan, cook tofu for 3-5 minutes.
Place avocado in a small bowl, add lemon juice and salt and pepper, mash to combine.
In another bowl, combine all dressing ingredients together with a fork.
To assemble tacos, spread avocado on each tortilla, top with lettuce, cabbage, tomatoes and tofu and drizzle over dressing to serve.
Ingredients
150g firm tofu crumbled
1 tsp smoked paprika
1 tsp ground coriander
salt & pepper, to taste
1⁄4 avocado
1 tsp lemon juice
2 large (40g) corn tortillas warmed
1 iceberg lettuce leaf shredded
40g red cabbage sliced
30g cherry tomatoes halved
Dressing
3 tsp hulled tahini
1 1⁄2 tbs (30ml) lemon juice
1 1⁄2 tbs (30ml) water
1⁄4 tsp ground chilli
1⁄4 tsp salt
