TOFU TACOS WITH TAHINI

How to make

  • In a bowl season tofu with paprika, ground coriander and salt and pepper.

  • Heat a non-stick frypan, cook tofu for 3-5 minutes.

  • Place avocado in a small bowl, add lemon juice and salt and pepper, mash to combine.

  • In another bowl, combine all dressing ingredients together with a fork.

  • To assemble tacos, spread avocado on each tortilla, top with lettuce, cabbage, tomatoes and tofu and drizzle over dressing to serve. 

Ingredients

  • 150g firm tofu crumbled

  • 1 tsp smoked paprika

  • 1 tsp ground coriander

  • salt & pepper, to taste

  • 1⁄4 avocado

  • 1 tsp lemon juice

  • 2 large (40g) corn tortillas warmed

  • 1 iceberg lettuce leaf shredded

  • 40g red cabbage sliced

  • 30g cherry tomatoes halved

Dressing

  • 3 tsp hulled tahini

  • 1 1⁄2 tbs (30ml) lemon juice

  • 1 1⁄2 tbs (30ml) water

  • 1⁄4 tsp ground chilli

  • 1⁄4 tsp salt
